Born in Burgundy, France, into a family of artists, Chef Doyen discovered the enchantment of pastry in his childhood, where the family kitchen became his first atelier. A graduate of the prestigious École Nationale Supérieure de la Pâtisserie, his 20-year career has taken him through Michelin-starred kitchens and global stages, establishing him as a leading name in contemporary pastry.

Renowned for his sculptural creations and refined French technique, Chef Doyen’s work transcends traditional patisserie, merging precision and emotion into edible art. His innovative touch has led to collaborations with some of the world’s most iconic luxury maisons—including Cartier, Marc Jacobs, La Prairie, Dior, Chanel, Louis Vuitton, Vacheron Constantin, and Hermès—as well as bespoke creations for Range Rover, and Vogue. Often described as the creator of “fashion-desserts,” his work blends haute couture sensibility with the timeless elegance of French craftsmanship.

Guests of The St. Regis Maldives are invited to step into Chef Doyen’s world of delicate textures and visual poetry through an exclusive lineup of festive experiences. On December 10, the celebrated chef will host an intimate pastry masterclass, offering insights into his creative process and sculptural finesse. That evening—and throughout the festive season—his artistry will take center stage at ALBA, the resort’s signature dining venue, where an exclusive dessert collection will be showcased daily from December 10 to January 7, presenting a decadent ode to the holidays.

The highlight of the residency unfolds on December 11 at Decanter, where Chef Doyen will join the resort’s Executive Chef for a six-course four-hands wine pairing dinner—an evening of sensory elegance where refined flavors meet inspired craftsmanship.
