Celebrity Chef Dharshan Munidasa’s specialty restaurant, Carne Diem Grill, which has its first and permanent outpost in the Maldives at The Marina @CROSSROADS, will host an international pop-up later this month at the Siam Kempinski Hotel, Bangkok.

This milestone celebrates a standalone restaurant conceived and launched in the Maldives presenting an international pop-up, signaling a strategic expansion and the introduction of its signature cuisine to a global audience.

The pop-up will take place at ALATi, which welcomes Chef Dharshan Munidasa for a four-night-only Carne Diem Grill experience. Widely respected within the Asia’s 50 Best chef community, Chef Dharshan is recognized for his disciplined philosophy, cultural depth and uncompromising approach to flavor.

Carne Diem Grill is an unconventional, avant-garde steakhouse built around Ignis Maximus - meaning “maximum fire” - a bespoke, two-meter charcoal grill designed by Chef Dharshan himself, with one custom-built in Bangkok exclusively for this four-night pop-up. Operating at temperatures of up to 750˚C and inspired by Japanese charcoal yakitori traditions, this unique technique creates a steak that requires no sauce, earning acclaim from guests as “The Best Steak Ever.”

In addition to Carne Diem Grill, Chef Dharshan Munidasa is also the founder and chef-patron Ministry of Crab and Nihonbashi Blue at The Marina @CROSSROADS Maldives. Both Ministry of Crab and Nihonbashi Sri Lanka have been recognized on the Asia’s 50 Best Restaurants list, earning international acclaim for their focus on exceptional sourcing and authentic Japanese culinary techniques. Carne Diem Grill by Dharshan has also been a part of Soneva Fushi Maldives’ collection of world-class dining restaurants since 2022.
