As an 8th-generation culinary expert, Viktoria is the steward of the historic Spielweg estate in Münstertal, founded in 1861. The resort invites guests to join them on November 24th and 25th for a remarkable gastronomic experience, featuring a delectable five-course wild game menu at Beach Shack and an enticing tasting session showcasing an array of meats and cheeses from the estate’s smoking chamber.
Carrying forward the rich legacy of her ancestors, who were celebrated hunters, master chefs, and founding members of the prestigious Jeunes Restaurateurs association, Viktoria is at the helm of Spielweg’s kitchens, where she crafts an innovative menu highlighting the flavors of wild game and indigenous herbs from the Black Forest. The family’s cheese-making tradition, steeped in history, thrives with milk from Hinterwälder cows that graze on a farm perched 1,000 meters above sea level. Demonstrating a deep commitment to supporting the local nature park and farms, Viktoria has introduced Spielweg Gin, a unique spirit infused with juniper, blueberries, cranberries, rowanberries, mountain herbs, and lemon peel, all sourced from the heart of the Black Forest. As she embarks on a journey to share her family’s passion and her extensive experience in game cuisine from her life in the Black Forest, Viktoria’s book, “FuchsteufelsWILD,” which received the German Cookbook Award, serves as a heartfelt tribute to the longstanding tradition of game cuisine at Spielweg.
During the stay at The Ritz-Carlton Maldives, Fari Islands, guests can anticipate an evening filled with culinary delights curated by Viktoria. The menu includes exquisite dishes such as Cod Ceviche with coriander, coconut, and roasted corn, Wild Boar Dim Sum, Pink-roasted Saddle of Venison with mango, Carrot Cake with physalis, passion fruit, and sour cream ice cream. It concludes with a classic slice of Gugelhupf, perfectly paired with Spielweg Gin. For a deeper immersion into the flavors of the Black Forest, guests are invited to participate in a tasting class held in our wine cellar, featuring sliced mountain cheese from Spielweg’s smoking chamber, Coppa, and Beef Ham—a delicacy cured for two months and then dried in a noble mold culture.
